Kecap Manis

Kecap Manis or sweet soy sauce is a condiment that is uniquely Indonesian. It is a thick, dark colored and sweet liquid made from black soy bean, coconut sugar, water and salt. The black soy beans are cleaned, boiled and fermented in brine solution for 3 – 4 weeks, once the fermenting process is finished, the beans are cooked with coconut sugar to create the thick texture and sweet flavor. 
Kecap Manis can be easily found in every household in Indonesia. As one of the most important condiment is Indonesian cuisine, Kecap Manis is a very versatile product that adds that very typical Indonesian flavors. Here are few simple recipes that include Kecap Manis that can inspire your next dinner.



Sweet Soy Sauce Marinade

  • 500 gr of Chicken or Pork
  • 100 ml Kecap Manis (Sweet Soy Sauce)
  • 15 gr Garlic, minced
  • 2 pcs Kaffir Lime
  • 2 pcs Kaffir Lime leave
  • 5 gr Salt
  • 5 gr Coriander Seeds


Method:
Marinade Chicken or Pork cutlets for 30 minutes – 2 hours and grill. Serve with a Side Salad or Jasmine Rice.

Sweet and Spicy Dipping Sauce

  • 100 ml Kecap Manis (Sweet Soy Sauce)
  • 20 gr shallots, thinly sliced
  • 10 gr Garlic, thinly sliced
  • 50 ml Soy sauce
  • 30 gr Thai Chilly, sliced 
  • 1 pcs Kaffir Lime
  • 2 pcs Kaffir Lime Leaves, thinly sliced 


Method:
Mix all ingredients in a mixing bowl and serve and dipping sauce for Grilled Fish, Chicken Satay, Fried Tofu or Fried Prawn Crackers for a classic Indonesian snack.

Easy Fried Rice

  • 250 gr Cooked Jasmine Rice, room temperature
  • 1 whole egg
  • 40 gr Carrot, thinly sliced
  • 40 gr Green Onion, sliced
  • 40 gr Cabbage, thinly sliced
  • 15 gr Garlic, minced
  • 1 Tbsp. Kecap Manis
  • 0.5 Tbsp. Soy Sauce
  • 1 Tsp. Fish Sauce
  • 0.5 Tbsp. Hot Sauce e.g. Sriracha


Method:
1. Preheat wok or Teflon pan on high heat
2. Pour 0.5 Tbsp. oil, making sure it coats the entire surface of the pan
3. Beat the egg and pour into pan, scramble eggs and quickly adding vegetables and garlic, cook until soft
4. Lower the heat, add rice and seasoning, mix thoroughly. Careful not to overwork the rice to avoid clumps of rice  
5. Turn the heat up again and give the well-seasoned rice a stir to create a slight caramel coat on the rice
6. Serve hot with Sunny side up egg on top
