600 ml heavy cream6 tbsp. white sugar, divided6 pcs egg yolks1/2 tsp. vanilla extractHot water

Preheat oven to 150 degrees C.Pour cream into a saucepan and stir over low heat. Do not boil. Remove cream from heat to slightly cool.Beat egg yolks and 4 tablespoons white sugar in a mixing bowl until creamy and the sugar is completely dissolved, add vanilla extract.Slowly pour half of heated cream into the egg yolk mixture; beat until combined.Pour the egg/cream mixture into the cream in the saucepan, stir over low heat. Chocolate Mousse Ingredients
50 gr sugar 2 eggs 250 mlcream 150 gr dark chocolate chips 250 ml cream, whip to a stiff peak
Method Whisk sugar and eggs together until pale and creamy, approximately 10 minutes.Heat 250ml cream to just below boiling point then slowly pour into the egg mixture while whisking all the time. If you do not whisk while pouring the mix will scramble.Return the cream and egg mixture to the pot. Cook on a low heat while stirring all the time until it has thickened.
